This coffee chia pudding tastes divine and gives you a good burst of energy. Just prepare the night before for a quick and healthy breakfast!

The chia pudding consists of coffee, chia seeds, maple syrup, a dash of vanilla extract, and some cinnamon for additional flavour. It adds a nice touch, but it’s not necessary.

Now I’m ready to share with you a new twist on chia seed pudding––Coffee Chia Seed Pudding. And it’s just as easy to make as any of the other chia seed pudding recipes. Perfect for coffee lovers looking for a kick of flavor in their pudding, this chia seed pudding might even give you a little energy kick!

Instructions

    • Gather all the ingredients.
    • In small cup or bowl, combine Instant Coffee, sweetener with hot water. Stir until coffee powder is dissolved.
    • Add half & half and mix well.
    • Next combine in Chia Seeds. Once mixed in, place in refrigerator for approximately 3 hours. Note - you can optional give the pudding a good stir about 30 minutes into the refrigeration process to prevent clumping

Important! If you are gluten free you may want to avoid coffee altogether. I personally have never had a problem drinking it, and I have a gluten intolerance. It is probably because I drink whole bean organic coffee, and grind it myself. I learned that it can be problematic for people who don't tolerate gluten. So I did some research and one article mentioned to try organic whole bean coffee because it isn't highly processed causing cross-reactivity issues. So please do the research yourself, and test it out. I try to only post recipes that are 100% gluten free since I have a gluten intolerance. I am really careful about avoiding gluten in my daily life.
